It seems weird to me that nothing is being done about this, we can't possibly be the only ones with this problem, or are we the only ones nagging about it haha?

Having the same issue myself. All my .doc downloads get a .dot added to them.
20" iMac (Intel) / 12" PowerBook G4 (Power PC)

The .dot addition problem to MS Word docs was solved for me after MS released its update to MS Office a month or so ago. Now that I've updated to Safari 3.1.1, however, the .dot problem is back. Is there a way to go back to the previous version of Safari?

Same problem here. Very frustrating!
I also have iWork 08 installed. I wonder is this is causing the problem or if is Safari 3.1.1.
Around the same time I installed iWork 08 I also upgraded to Safari 3.1.1, which has actually been loading webpages really slow, getting stuck a lot of the time and sometimes refusing to load some webpages at all.
Can't tell what is causing it but I sure hope we find the answer.

Unfortunately uninstalling Safari 3.1.1 (or anything other than MS Office 2008) won't fix the problem. It seems that doing something (installing things, moving things around, etc.) touches something and the problem returns. The key will be to find what action causes the changes and what is being "touched".
For now the best solution is the Automator Action/Application.

I don't think it's your iWork 08. I installed that months ago and my Word stopped doing the .dot addition just fine when MS updated MS Office. It started back the very day I updated to Safari 3.1.1. Also, it doesn't happen with Firefox, only Safari. That may be why there's not much of an outcry.

I can definitely say that this problem has been solved superficially with the MS 12.0.1, Safari 3.1.1, and Mac OS 10.5.2 update. I came to this conclusion because i have no problems opening downloaded files with the .dot, .pot, or .xla extensions.
However, there is still the cumbersome inconvenience of having to change the extensions do to compatibility with other systems when sharing docs, etc. (thanks for the Automator app/workflow to help with that).
Also, with being so enticed by the power of Quick Look on Leopard, the contents of MS files with the .dot/.pot extension cannot be viewed with Quick Look. The .xla extension doesn't seem to cause a problem. I might be lazy, but I love being able to view a Word doc without actually having to open Word. I recommend trying it to save time (only for reading though, no editing/copy/paste, etc.).
Again, be sure to remove the .dot/.pot extension to view the contents of those files in Quick Look (select the file in the Finder and press the space bar for those who don't know).

Sundoro, nobody says .pot or .dot files cannot be opened. They can be even with 12.0. We're trying to fix the problem of Safari adding .pot etc to files by making it save the files with the normal extensions. Duh.

This is crazy!! Office 2008 SP1 12.1 doesn't fix it either.
Am I right in thinking we all have iWork installed as well?

Microsoft has made it quite clear they don't consider this much of an issue. I don't think there's much of a chance a fix for this issue will come from them soon.
While many of us may have iWork, it doesn't have much to do with this problem. Although using it instead of Office 2008 will certainly solve your problem...

Considering that the SP1 update broke the Office 2008 installs on both my Macs (it will only launch the Setup Assistant) I am actually considering uninstalling Office and not re-installing it back. iWork does a perfect job replacing Office without the bugs and sluggish performance.
