Can an iPhone 7 be reset to default to video on opening the camera? I would like to start shooting a video as soon as the camera app opens.

Yes, first go to Settings/Camera/Preserve Settings and turn on Camera Mode. After that the camera will always open in the mode last used, so if you took a video, it will open to video the next time.

The camera app always opens with Photo. There isn’t currently a way to set it to video as default. Another app maybe able to do this for you?
