Turn off Location Services for the apps you don’t want to know your location. Note that if you turn it off for Find My then you won’t be able to find your phone if it is lost.

Also, note that this will not hide your location from your network provider or law enforcement. For that you must turn the phone completely off.

Go to Settings -> Privacy -> Location Services -> turn it Off.
