I'm unclear on the security risks of using the latest OpenOffice available for Mac OS. When downloaded from https://www.openoffice.org/download/ Mac OS doesn't want to open it because it has an unidentified developer. Is it safe to override this?

Yes, it's safe. Thousands, if not millions of folks use this suite.
It comes up as unidentified because no one in the group of people who work on this open source suite has paid Apple's developer fee. That doesn't automatically mean it's malware.
The free LibreOffice 24.2.2 is more frequently updated and the better choice over OpenOffice. Opens OpenOffice documents and many other formats.
Both office suites have evolved from the same origins shown in the History section of https://en.wikipedia.org/wiki/LibreOffice and I personally dropped OpenOffice ten years ago for LibreOffice which I still use.
Ah! Good catch, VikingOSX. I saw the name and it didn't register that OpenOffice is barely updated anymore. LibreOffice became the new project.
