All of sudden, all of my contact and photos are on my wife's phone. We have separate emails and Apple IDs. However, we do share an ICloud account.
Firstly, how can I remove all of this off her phone without her doing it manually, contact by contact, photo by photo?
Secondly, how do I prevent this from happening in the future?

What do you mean by share an iCloud account? Family sharing? Or, you both log into the same email?
contacts will only merge if you use the same email, log into the same Apple ID, or logged into your own Apple ID on another device.
We have a family ICloud account. We do not share the same email. That's why I don't understand why my stuff is showing up on her Iphone. Is there a way to turn this off and then delete my info without doing it manually? Thanks for your quick reply!
using Icloud family share will not sync a user’s data to another. Contacts would have to be manually removed. But, it’s far better to determine how the contacts arrived on the other device in the first place. I’d start by adding a contact on your device and seeing if it updates on the other. If it does, explore whether the devices are logged into the same account anywhere or if the others email is set up on the other device.
