Did you already unpair the watch from your iPhone?

This will install the latest watchOS version.

Also make sure, your iPhone has been updated to the latest iOS 17.4.1

I did this today and will see how it goes tomorrow. The watch asked to restore from backup or set up new. Which one should I have picked?
