Repurposing Old iPhone for a Peppers Ghost -several questions related to downloading and keeping video on phone

I want to create a tiny, Peppers Ghost inside of an upside down wine glass on top of a fake book as part an art installation going to Burning Man this year, and was thinking of using old iPhone's as the video source and player. There will be power available, but no wifi or signal. I'm thinking about ways to keep the phone cool.
I've attached a rough sketch of what I hope to do in case that helps answer my questions below.
I understand that there are programmable kits with chips and screens that I can use to download and play videos. I've purchased one to experiment with, but I'm concerned about the robustness in that dusty setting. I'm also not an electronics person, so my soldering is...not what it should be. iPhones are dust resistant. The video is also prettier on the iPhone than it is on the kit hardware. There's other things that make repurposing old phones appealing. So, might you, Apple community, be able to
1) confirm that I can still download and play video on a phone without any wifi or bars? I searched here and some posts from 2019 and it says that you can do this by changing your settings to "download and keep photos and videos". Will I be able to play a video on a phone without signal of any kind?
2) What the oldest iPhone I can use to play a current iPhone made movie? — Can I use a really nice current iPhone to shoot the video but then download it to a older phone and have it still look good and play back? I'm thinking of using a video app like those used for social media to make a 1-3 minute clip into a continuous loop.
Are there any other settings I should change to make it continue to play?
3) I need to assume it will run for 24 hours for 7 days. But it will only play the video. Is this realistic or will it shut down?
The phone will be hidden inside the fake book which will be covered in leather and decorated to look old.
So, it's very enclosed. But I plan to put it on a rack inside so there is air underneath and also cut vents into the the sides which I'd cover with fine screen. I will test it by running it in the box in the sun ( the we get some) but wondered if you all might have opinions or advice about this. Is it going to be too hot in there? It will be out of direct light, in a darker area but maybe in a small cabinet.
4) Are there other issues I haven't considered that you can advise me about?
