Yes, You can use wi-fi when in airplane mode.

While in Airplane mode you can go into settings & turn both WiFi & bluetooth back on.
Yes. When you turn on Airplane Mode in settings, WiFi automatically turns off, but you can just turn it back on. Apps that use things like GPS to operate won't work, but as long as you're connected to WiFi, most apps will work fine.
