Settings > General > Network > Cellular Data > Off.
If you don't want to receive or place any calls either and the same for SMS, enable Airplane Mode followed by turning on wi-fi access. All other iPhone radios will be off.

Turn off cellular data service and enable wifi from settings>general.
Thanks Allan..seemed so simple and yet I wasn't sure! lol
Let me pick your brain on this one..is there a way to make one folder to put various emails in that come from different sources..ie..yahoo, personal domain, me.com? I would like to keep some hotel confirmation number letters, invoices , boarding info. etc. and keep them all in one place together for a trip abroad.
No.
I use one email account for this when traveling - one email account for my hotel reservations/confirmation, flight/boarding info, invoices, etc.
