Buy as much as you can comfortably afford. Better to have and not need than need and not have. Plus, it will be worth more when you sell it.

Most space is taken up with videos or music. Look at your iTunes library. How large is it? Do you want to be able to sync it all with an iPad? How much do you expect it to grow within a few years? (Do you buy 10 songs/videos a year? 100?) You can do the calculations and work out which iPad will suit you best.

If all you want to use the iPad for is email and apps and *some* photos then the smallest available would suffice. Be aware though, video and lots of 10MP photos will quickly eat up space.
