I recently purchases 2 iphone 3gs and am trying to use them with straight talk. They are att phones not under contract anymore. How do I go about unlocking them to be able to use the data with straight talk? I have to change the APN.

You will need to contact AT&T to request unlocking. Here are AT&T's official requirements and procedure for unlocking an iPhone:
You do not need to unlock the Iphone for Straighttalk Service to Work on a Locked AT&T iphone (It won't make any difference)
Straighttalk are just using AT&T's Network and the iPhone sees them as AT&T Sims). Use the iPhone Configuration Program or unlockit to set the APN for Straighttalk and data will just work
