Have you looked in Preferences? Both Pages and System.

btw It is not mm it is cms. Inaccurate as well, unfortunately.
Very easily: Pages > Preferences > General Preferences > Ruler Units > choose unit
Did you know there is a free Users Guide available for download? Look in the Help Menu.

I have. My ruler is set to inches in General Preferences but when I go to adjust the size of the document, margins, etc....it defaults to mm. Which it is mm. I know the difference - I live with the metric system 🙂
Thanks Walt - I have done this however when I change the size of the document and margins it is in MM and I can't figure out why that is.
Yep got that...but then under custom measurements it is mm still.

Page Setup...Manage Custom Sizes (Under Paper Sizes)
Then you haven't changed the system preferences concerning the measurment. Paper size is a system feature and not just for Pages. System preferences > Language and text > Format tab or similar > way down button for measure or equivalent change to american standard
That isn't Pages, that's OSX's printing and it is picking it up from:
System Preferences > Language & Text > Region > Measurement units: Metric/US
