How transfer data from iPhone 4S to iPhone 5 without disrupting iPhone 5 standard apps?

Hello, all.

I'm trying to transfer the data files and downloaded apps from my wife's iPhone 4S to her new iPhone 5.

I've been told that all I have to do is restore the iPhone 5 from backed up iPhone 4S. I've backed up the iPhone 4S, but my concern is that I don't want to override or wipe out the apps resident on the iPhone 5 (like the panorama function on the camera, for instance.)

What is the best way to accomplish this transfer?
