HOw do I change my iCloud account email address without loosing everything

Go to Settings>iCloud, tap Delete Account, then sign back in with the new ID. This will delete the account and any data you are syncing with iCloud from your device, but not from iCloud. Provided you are signing back into the same account, your data will be synced back to your device when you sign back in.
However, if you are changing to a new iCloud account, be sure to choose Keep on My iPad when prompted. Then sign into the new account, turn on your iCloud data syncing and choose Merge to upload the data to the new account.
Before deleting the account, save your photo stream photos to your camera roll to avoid losing them (tap Edit, tap all the photos, tap Share, tap Save to Camera Roll).
