Can I delete the new ios7 system? I like the old one better! What do the new icons represent on the pull-up menu?

Sorry, downgrading is not supported by Apple.

As to the icons,

give the manual a read. It'll explain things.

You cannot delete the Operating System.

Going to the iBooks store and downloading the free iOS7 guide might be the best option.

So you can't go back to the os the IPad was issued with?

You cannot. It's a firmware upgrade and is permanent
