Yes. To play an album in correct track order you simply need to go to the albums section on your iPod and as you mention, make sure that shuffle is off. This assumes of course that the tracks numbers have been filled in, which in normal circumstances, they will be (i.e. downloads from a CD or purchased from a digital store such as the iTunes Store or Amazon).

Use the Albums view and select the album. Start the first track playing and make sure that you are not in shuffle mode:
