Numbers is putting different data into pie chart than the selected cells
Numbers keeps loading different data into my pie chart than the cells I selected. How do I MANUALLY override it and enter the actual values?

This is not normal behavior, and neither was the colors changing on all your charts. This is the first I have seen anyone post of either issue. Can you be more specific about what is changing with your chart data. Maybe post a screenshot of before and after and some explanation of what you did between the two screenshots? Screenshot is Command Shift 4 then drag a box around the section to capture. Use the Mountain and Sun icon below to put the images in your post.
Actually, looking at that icon it kinda looks like an avatar version of a pregnant woman in bed leaning up to push. I think I might fail a Rorschach test.
