Does anyone know if I can trade my AirPods Max for a new pair in another colour way . I have AppleCare+ for them, tbh got tired of the black ones and want a new colour. Is it possible to trade them and in case not, if (and when) they break can I ask them to give me another ones in a different colour ?

As I noted in my first reply, they will replace them with an identical model. That means the color will be the same.
Seriously, though, you wear them on your head. You can't even see them when you're using them.
If you bought them from Apple and they are less than 14 days old, you can exchange them. Beyond that, no, you can't.
If they should need warranty services, you will be given an identical model.
No idea what you mean by “make the apple care change”.
You can not get them replaced with a different color.
