Wife's name in App

I would imagine the app is Mail and there was an email sent to your wife and Siri is linking that email address to her name.

Look in Contacts on her card to see if the suggested address is there. If so you should be able to delete it.

turn off Siri suggestions, see if that resolves the issue

Sort of a shot in the dark but it is possible that a cache is "remembering" what you want it to forget. Maybe try booting your Mac into Safe Mode (follow Apple's instructions for your specific model), which does erase some caches. Then restart and boot normally and retest.
