IOS 17.4.1 iPhone 13 Pro Max
I have two do not disturb schedules. One for weekdays and one for weekends. The weekend is set to Saturday and Sunday and the times are 2100 - 1000. The 1000 end time from the weekend is bleeding over to Monday at 1000, when do not disturb should be off. The weekday schedule is set to 2100 - 0530.

You have the schedule set up so that it starts and ends on different days.
The start date/time is the most important. It is set to start at 21:00 on weekends and end at 10:00.
So it starts at 21:00 on Sunday, and the end time is 10:00 the following day. Monday.
You need to change the schedule.
The schedule is working fine. You’ve set it up incorrectly to do what you want it to do.
Well that’s not helpful. It’s set up for weekend; not weekend and Monday. It’s a glitch with the options apple has currently. I’ll have to set Saturday and Sunday separately
