Syncing newer music in my library onto iPod touch 3rd gen (PC)

I haven't used my iPod touch for a while now but would like to use it in my car. I've bought a lot of music since I last synced it, so I'd like all these new purchases to be on the old iPod. When I've got the Apple Music app open (since installing that app I can't see any of my own personal music in iTunes anymore, ugh), I don't see where my iPod would be listed as a device (it's attached to the computer--and I could see it in iTunes till I installed the Apple Music app).

All I want to do is sync this iPod with my actual, downloaded or CD-imported music... like I used to do.
