How do I go paperless and stop receiving a paper statement each month?

Apple Card is paperless by default.
If you are receiving a paper statement, it means there's an issue with the email address associated with your Apple Card account (Your Apple ID) and emails cannot be sent to it. Verify that and make sure its correct.
