I would like to ask you , which Mac OS is the best for it ?
I've installed Ventura , but I'm not satisfy , it's not much fast

If you don't like Ventura, the "rollback" would consist of creating a bootable flash drive, booting from it with the OS you want, erasing your drive, installing the OS from the flash drive and them migrating your backed up data to the new OS ... likely Monterey.

Well it is possible to rollback. Download the Mojave application from Apple Support to Applications. Through your store account. Take a USB stick and erase the content. name it. See the command for the terminal.
Change the name of your USBstick in the command to the real name.
Open the terminal and the paste this command in your terminal. After several minutes you have an install stick with the OS you want to use on your MBP 2017
sudo /Applications/Install\ macOS\ Mojave.app/Contents/Resources/createinstallmedia --volume /Volumes/yourUSBstick && echo Mojave stick made; say Mojave stick made
The latest macOS version is the best due to safety and security reasons.
Roll back is not supported and I would advice against using old macOS versions like Mojave, due to the told security reasons,. that OS did not get security updates in a long time
Generally the latest MacOS is best.
Unfortunately, Apple does not support “rolling back” OS versions; so your only realistic option is to “move forward” w/ Ventura.
