What information do app developers receive when I download their app?
Sometimes I realize I don't want the app, so what do they get out of the download and opening of the app for the first time?

No way to tell anymore. Governments are forcing Apple to allow developers to have more access to your personal information. As long as you stay on the official Apple App Store and only download apps from there, then developers have no access to your personal information of any kind. But if you download from any of these "alternative" stores, or try any "side-loading", then you are bypassing Apple's protections.
For example, what if I allowed notifications and then uninstalled it?
