I left my Mac unsupervised with someone I don't know with all my accounts open, now I question myself if the person sent the information of any of my accounts out or emails linked to accounts ex.

Unable to determine what the person did. If a person has access to your unlocked device, they are free to do whatever they want with the data on the device. If they know your passcode, then they also had access to passwords for all of your accounts.
At a minimum, you probably will want to change your Apple-Id password.
Even if you decide to do little else, you should take this a good time to improve your passwords generally. Create some new passwords for those that are not very complex, and reduce the number of passwords shared across multiple sites as well.
