either turn it off entirely, or make sure "AssistiveTouch" and "Hand Gestures" are also set to on so that you can perform the actions needed to trigger Apple Pay (which is, by default, double clench to open "Action Menu" > pinch to navigate to "SYSTEM" > clench to tap > pinch multiple times to navigate to "PAY" > clench to tap).
