I am trying to construct a spreadsheet with references to cells in other documents. I can populate the first two columns with ="My spreadsheet.cwk"!A1 (to A5) and ="My spreadsheet.cwk"!B1 (to B5). But when I want to populate the third column with ="My spreadsheet.cwk"!K1 (to K5) and press [Enter] the expression simply resolves to K1 (to K5) and the cells display the error message #NAME

If you want to use a cell row R of column C in an external sheet, it is necessary that a cell in row R of column C exists in the destination sheet.
My guess is that there is no column K in your destination sheet.
As it is not documented, I don't know if it is a feature or a bug.
