Yes you can, however doing so would not be endorsed by Apple. There is a piece of software called MacOpener written by DataViz which will allow you to mount, read, write, and format HFS+ disks, including the iPod. A free trial can be downloaded from http://www.dataviz.com/products/macopener/. Once your have that software installed, you should be able to use any iPod comatible software to open your iPod to add and remove music.
