Pages v5: Same document: table to text/text to table.
Pages '09 permitted us to select one of two menu items to convert selected tables or text to their opposite. No release of Pages v5 has this feature, and has forced creative solutions to overcome this issue.
The following graphic shows how to translate tables into text, and text into tables while in the same document. No more copying to external applications, and then back into Pages v5. Bookmark this post for future reference.
In the Pages v5 Text to Table section, when using Pages v7+, click once-only to select the first table cell, and then use the Edit menu : Paste and Match Style to expand the table to fit your data one value per cell.

Note: Text items that contain any separating space must use a single, non-breaking space to avoid the paste operation into the table splitting on the original white-space. On a U.S. keyboard, a non-breaking space can be entered with option-spacebar. On non-U.S. keyboards, open the character viewer, and in its search field, enter 00a0 and a return. This is the Unicode value for non-breaking space, and the following image shows how to select it. You double-click the blue selection box to insert the non-breaking-space into your text.
