The ability to manually configure an email account in Mail in El Capitan has been changed from difficult to almost impossible, but it still can be done.

Start by adding a new Account and use the Other account button.

  • If in Internet Accounts, choose Add Other Account, then Mail Account.
  • If in Mail, choose Other Mail Account, then Continue

For the username and password, just enter random characters for both (username must be in <chars>@<chars> format).

You will then have a screen where you can set the Account type and the incoming and outgoing servers.

Fill in the correct details for your account.
