Create an IMAP account (I use MobileMe).
use Outlook 2007 or equivalent to open the IMAP online file structure and the PST file in the same window.
Drag the folders off the PST file into the IMAP online file structure.
Set the IMAP email account up on the iPad.
Force each IMP folder open and make sure it downloads all the emails to the iPad (can take a while even at 200 messages a time)
It takes ages as you are uploading files and the online folder can be a bit slow to upload but it works fine. I keep my active stuff online in a Hosted Exchange 2003 server setup and the archives are kept in my MobileMe.
Bear in mind that Indexing will takes ages and ages though.MacBook Pro 15", Mac OS X (10.6.3), iPhone 3GS 32G
