what method do you use to point clients to your SUS server?
DNS redirection, managed prefs, or do you push the pref via ARD (or some other method) ?
My preference is to use DNS to rediect clients away from Apple's server to my own, this way all clients on the LAN will use your SUS server whether they are managed clients or not. When they are off the LAN, they will use Apple's servers.

if you use this technique, you have to be sure your own SUS server doesn't use itself for updates (or it will never download new updates). A simple entry in /etc/hosts can fix that.
