It essentially lists the fax as completed, but I can get no further information. What I need is a fax receipt that gives the number dialed, number of pages sent, time sent etc. From what I can tell, the Apple fax software can't do this. Is anyone aware of fax software that produces a fax receipt?

For legal reasons, there are things I must send via fax, and I must have a printable receipt verifying the fax was sent.
I don't know how to get the OS X fax software to create a receipt. There may be third-party fax software that can do that. However, in the program that actually manages the faxing operation there is a fax log capability. Perhaps that would be good enough for you.
On my Mac the fax program is in "myhomefolder"/Library/Printers and is called "External Modem". If you launch that and don't see what you need, check the "Jobs" menu and the "Job Info" toolbar button.MacBook 5,2 2.0 GHz, Mac OS X (10.6.4)

I checked it. It does give me information about the fax. Unfortunately, I need a fax receipt with more information--like date, time, pages, number, etc. I need to produce a printable fax and a pdf copy to demonstrate that a fax was sent.

The list of completed FAXes can be found by opening the Fax Queue in System Preferences. Make sure to select "Show Completed Jobs" in the menu.
I had a heck of a time finding where this info was stored. I finally found it in /var/log/cups/page_log
This file contains info for all print jobs, listed by date/time and printer name. (I'm in Snow Leopard).
This information (for FAXes) shows the status, name of document, Fax Number, date, and time sent. It doesn't show the number of pages so that's the only thing missing from Bottlerocket's request.
