Quit Safari (Command + Q)
Open the Mac Mail app then from the menu bar click Mail / Preferences then select the General tab.
Make sure: *Default email* reader is set to Sparrow

I've also noticed this problem in 'Preview' application - it ignores the default mail client. I suspect this is a bug/problem in OsX.MacBook Air 13" late 2010, Mac OS X (10.6.6), 4GB Ram, 256GB SSD, 2.13 GHz

Sparrow is set as the default mail app - but when I send an invoice from Billings - it opens up Mail.app. I'm at a loss to know what to do next. Yeah, I'm interested in finding out an answer for this as well. I'm thinking it can't be changed. From what I've read people who use Entourage are complaining of the same thing. There has to be a solution. What happens if I uninstall mail completely?

There is no solution. The menu item is hard-coded to use Apple Mail. You can't change it.
