Open System Preferences.
go to Internet & Wireless > Network
You should see you network connections in the left list. I usually see Ethernet, Firewire, Airport.
If you don't see Ethernet, Click the + at the bottom and add Ethernet. You may need to click on the padlock and enter you root password.

I've still the similar problem:
No ethernet connection over LAN cable any more since update.
System Preferences: Ethernet is not shown in the connection list, also not able to add via "+" because not shown.
System Profiler shows the general hardware availability of ethernet.

I have the same problem. Ethernet just keeps saying "cable unplugged". This is what i've tried that HASN'T worked.
- made new user
- reset PRAM
- reset SMC
- changed locations
- deleted and tried to re-add ethernet (it wasn't even listed to be able to add it)
Bugger of a problem. I wonder if Apple are looking at it.

but it doesn't fix my problem:
The "ethernet" opportunity in the drop-down menu in "Preferences" --> "+" --> "connection" isn't available any more [only: AirPort, FireWire, Bluetooth-DUN | VPN, PPpoE, 6 zu 4]*
The same if I create a new network location system.
*German language installed, hope the translation is correct

No ethernet after 10.6.8 update. But AirPort worked. So I switched to wireless.
I thought Lion would solve the problem, but it did not. Still same problem.
The Solution for me:
Starting in safe mode.
Now I'm able to add the ethernet option as connection which wasn't there until now.
The added "Ethernet" functionallity (cable LAN) is now labeled on the left side as: "AirPort" and the Wireless is now labeled as "Wi-Fi". It looks confusing, but the functionallity is there.
Perhaps someone knows how to fix this "labeling-problem".
