Open iTunes > Preferences > General. Near the bottom right there is "Import Settings". Click "Import Using…". The expansion triangle will offer you options for import coding; choose MP3 Encoder.

That will work for CDs but there is a really cool app that seems to be free called Switch. Its really easy to use and converted all my .wma files from my PC to itunes where I can play them.

I have been searching for an easy way to convert files from my digital audio recorder to mp3 and/or iTunes and this is perfect and its easy to use. Much better than Flip4Mac. Thanks for the information.
