I can confirm that it does what you are saying. It isn't a related to the concatenate function or other joining of cells. If you copy cell A1 then paste it into TextEdit (in a plain text text document), it puts quotes around word1".
I suspect it is a bug.

When we copy a cell's content in the clipboard, this one receive a huge set of informations :
«class PDF » which describe the cells in a PDF format
«class RTF »
uniform styles:«data ustl …
scrap styles:«data styl…
«class 8BPS»:«data 8BPS…
«class BMP »:«data BMP…
«class TPIC»:«data TPIC…
«class PNGf»:«data PNGf…
GIF picture:«data GIFf…
JPEG picture:«data JPEG…
When we paste in a document created by a given application, this one extract one of these sets of datas.
When we paste in a TextEdit window in Rtf format, the app extracts the RTF structure and we get a cell containing word1"word2
When we paste in a document formatted as text, the app extracts the Unicode text or the «class utf8» contents.
My good old huge script :
set the clipboard to (the clipboard as text)
is fooled because since at least 10.6, "as text" is in fact a synonymous of "as Unicode Text" or "as «class utf8»"
This is why I built a new version :
set the clipboard to (the clipboard as «class ut16»)
but I wasn't satisfied because it returned one return at beginning and an other one at end so, I enhanced the beast.
set maybe to the clipboard as «class ut16»
if maybe starts with return then set maybe to text 2 thru -1 of maybe
if maybe ends with return then set maybe to text 1 thru -2 of maybe
set the clipboard to maybe
With this one, we get the same result in a RTF or in a TextEdit plain text document.
It's interesting to paste in Pages too because if we copy the cells containing the formulas then paste in Pages the standard way, we get cells with red triangles because the embedded formulas can't find what to apply to.
With the script, we get the correct values (without cells)
If you want to be able to paste in Pages keeping the cells structure, use :
set the clipboard to (the clipboard as «class RTF »)
Of course, I will file a report because I don't understand why, in some cases, extraneous double quotes are added.
At least, you have now tools allowing you to get what you want, no less, no more.
