Same problem here.
I hope it's a Lion bug and not a new feature.
Waiting for an upgrade from Apple, you can resolve opening Word and Excel files with OpenOffice or with a Microsoft Office version higher than 2003.

I just encountered this exact error. Lion Server 10.7.1. Windows XP running Office 2003 giving the exact same error.

I see the SAME error here (with Office 2003 for Windows and Lion server)
What IS clear is that Snow Leopard server does not have this problem.
It is also clear that apple has written their own SMB protocols into Lion server. I'd guess that these have something to do with the Windows Office with Lion Server problem.
Some say it is solved by using MS office 2007, whereas others say MS Office 2010 is necessary.
Does anyone know what is causing this or what can be done to solve it?

Same issue here. Also it works with docx files but doesn;t work with doc files. Very strange.

I think the issue is that Apple chose only to support SMB 2 protocols in Lion server and Office 2003 (and earlier) only supports SMB 1 protocols.
From what I understand, Office 2007 and higher does support SMB 2 protocols so it should work.

Office 2007 DEFINTELY solves the problem!
I think it uses SMB 2 - as Apple SMB in Lion does not support SMB 1
