I am wanting the same information. But for a slightly different reason. Someone deleted the WIKI calendar and I need to restore it so if someone can answer ca01ei thoughts I am sure it will help me out as well..

Read this documentation posted by Apple on the wiki - https://help.apple.com/advancedserveradmin/mac/10.7/#apd59153f0a-7ed3-4c64-9c74- 3a1fff831475
That folder only stores the uploaded files so if you go to your wiki and try to open an attached file it would no longer be there.

Try this page for a command to use to back up the Wiki. It seems to work, although I haven't had time to purposely screw it up and then run a restore test to see. Also, contrary to the page instructions, I don't think you need to switch off the Wiki to dump the database.
Unless you've turned on Time Machine, the wiki will not get backed up automatically. You'll have to write a crontab or similar thing.
Lastly, I'd warn anyone against trying to edit the SQL database directly unless you know exactly what you're doing. I've poked around in there and it's not obvious what affects what and how.
