When I tried to do as you said with iPhone explorer. I discovered that the plist was empty.
Then I just suppressed the plist from ipad and launch again the app (concerned for me were Pages Numbers and Keynote)
I launched again the apps and was able to retype the webdav data.
Best regards and thanks for the trick

I wrote to the previous operator, Nick Farina, of DroDAV.
Nick has temporarily restored DropDAV so that we can all logout.
Not sure how long this options will be up though.

Try this, unplug the Internet cable from your router, but leave it on, then go to Pages and try to save something to WebDAV, and it should ask you to enter the WebDAV address again, just enter your new one, and it should work now. You can reconnect your router to the Internet to access the new WebDAV.
I have iOS 5.1, it may be different for iOS 4.
