Have a look at my thread I have the same on two virgin handsets, a 3GS and 4S running ios5.
I believe the app is timing out before the 'check' of the playlist contents is completed.

I have tried the suggestion below :
"ONLY WAY TO FIX THIS IS TO GO BACK TO ITUNES AND DE-SELECT 'SYNC MUSIC' THEN PRESS 'SYNC' (REMOVES ALL SONGS) THEN GO BACK AND SELECT 'SYNC MUSIC' CHOOSE MY PLAYLISTS AND LET 7669 SONGS COPY BACK TO THE DEVICE!"
But it didn't work. After reloading the iPod library (to the exact same size), I still get the white screen when launching the iPod app. Then it closes after about 20 seconds.
However I have tried to downsize the library to 300 songs and it works perfectly fine. So it's definitely an issue of how many songs we can sync. Seeing I have had this problem recently, my limit is probably between 3 000 to 3 200 songs..
That kind of problem is definitely not what I'm used to with Apple. Please.
