As I wrote, YESTERDAY Apple published 10.5.1 Beta3 (build 41) and I did some tests and I saw that things were much better, TODAY (24 hours later) Apple released iTunes 10.5.1 (build 42).

Yeah, nikicampos is right.
I was encountering the same issue.
I solved it installing Itunes 10.5.1(42), even if I'm not using Itunes at all.
Albumarts will now appear in every folder from the finder.
I closed my topic because I solved it :
Is it the same for you ?

I wish iTunes 10.5.1 solved this problem for me, but it hasn't. I still cannot get album artwork to show up in Finder. I've rebooted, repaired permissions, reinstalled iTunes, installed XCode, relaunched Finder, deleted the Album Artwork cache, and deleted the Finder plist file, and still nothing.

I installed the newest iTunes and it finally worked for me. This is months after release of Lion X. I'm just happy that it's finally resolved for me. Time to unsubscribe!

Almost 11 months and no update but maybe someone found a solution, and it worked for me too:
