Yeah, its possible, but not straightforward. You will need to go through the Ultralite manual a few times (at least the pertinent parts) to figure it out. The basics though are, you have the Input section, the Mix section, and the Output section in CueMix.
The inputs are obvious; plug instrument/vocal inputs, set the eq or effects per input. Physical inputs/jacks.
The outputs are also obvious, set levels and eq, etc for each physical output pair.
Where things get a bit confusing is with the Mix section. There, you can set up software based mixes for any output pair (one separate Mix per output pair). You can also assign the headphone out to any output pair. A Mix is really like a Bus.
So, in your case, set up a separate Mix for your axiom, click, vocal, and assign that output pair to the headphone out. Create a separate Mix with axiom and vocal and send it out a different output pair, which is physically wired to your PA/FOH.
CueMix is not intuitive or obvious, but it is very flexible so keep messing with it and take the time to work through the manual until it makes some sense. I still have to pull out my manual when things don't make sense, or I forget what the #&* the darned thing is doing.

All of this might be easier if you just imported the tracks from your iPod into Mainstage and used the Playback instrument to play them. Then you can do all of the routing from MS.
