Hello - Hope this helps, since I just had to do it too.
1. Set up your Google account information on your MAC (System Preferences >> Mail Contacts & Calendars).
2. Then open iCal - go to Preferences
3. Click on your Google account (should be listed on left of screen) then hit the DELEGATION tab (top right)
4. Give it a minute to think. You'll (finally) see all your Google calendars listed; and then you check the ones you want to have appear on your iCal.

Thanks for the reply (was so excited to get this working and off of my mind I almost got out of bed at 2 AM!).
I am currently using the latest Snow Leopard version and can't seem to find "Mail Contacts & Calendars" in my System Preferences.
Sorry to sound utterly clueless, but am I just not seeing it or is this perhaps a Lion option?
Anyhow, I really appreciate your help.
