Around Christmas, I purchased a bunch of songs that I don't want taking up space on my iPad throughout the year. I plugged in the iPad to my computer (as I normally do to back up/transfer), selected the iPad on the left pane, then went into the "Music" tab at top and made sure NONE of these songs were checked off either by Artist, Title, Compilation, Album, etc., yet they are STILL showing up on my iPad.

I also tried deleting them from off the iPad but they still show up.

In order to sync only the songs you check in iTunes, you must first connect your iPad to your computer and go to the iPad configuration window.

    Check “Only sync checked items”

Make sure that this option, at the bottom of the page, is selected. Once you’ve done that, be sure to click “apply” at the bottom-right corner.

Can you now select iPad from the left pane of iTunes and then delete that music in iPad manually? Sync after that and ensure that the music is gone from the iPad but remains on iTunes as unchecked items.

Once you select your iPad from the left pane of iTunes then you should see the music listing on the right in iTunes. Select what you want to delete and the right click and choose delete.
