Since Market Felt font has no Chinese characters in it, that is an illusion of some sort.
The iPad can only display fonts that it has installed. For Chinese that is only Heiti.

Se the title. But it only seems to work in this case though - prove that Kai Ti is indeed in iPad itself.
A more likely explanation (since no list of fonts for iOS includes Kaiti) is that the Title has been transformed into an image during the publishing process. But more research is needed.....
