This is what I did for Address Book, not sure if it's the most elegant solution but it worked:
In Address Book on my Mac, I went to the page where I can see my accounts (On My Mac, and iCloud).
I just selected iCloud, then did a select all the contacts. Then dragged them into a group in On My Mac. They transferred there.

IIRC, you could go to system pref. then un-toggle the icloud checkbox for iCal. Then you'll be prompted if you want iCal to keep the icloud stuff on your Mac.
Is this maybe what you were looking for? It's late and I may not be understanding right.

Hackintosh is right, when you uncheck iCloud you'll be prompted to optionally save on your mac.

Lanny, HACKINTOSH, that works with, e.g., an iPhone but not with my Mac. When I uncheck the Calendars & Reminders checkbox in the iCloud Prefs, I only have the options of Cancelling or Deleting the Calendars from my Mac. If I "Delete from my Mac," then only birthdays from my address book show in Calendar after restarting; no other calendar events.
I need to stop using iCloud but don't want to lose my calendars. How can I transfer them back to my Mac?
