Connect you iPod directly to the body of the iMac and not to the Keyboard USB port or any USB Hub, these are shared and dont have enough power for the iPod, especially ancient jurassic version, that is powered by steam, and uses slow hardisk.
When you want to sync this iPod, do it as the last task of the day, and don't do anything else on the iMac, preferably disconnect all other USB devices, bluetooth and dont go on Skype.
You can do a disk diagnostic as posted by tt2, to check the health of your hardisk.

Thanks Bilbo! I always have it plugged directly in the back of the Imac and never had these slow syncing issues before. Not until I did the Itunes latest update. So my Ipod classic is a dinosaur eh?
Had it for a while and it always worked great but thinking of trading it in sometime if it has any worth towards an New or Used Ipad. I also have my daughters old Ipod touch 2G to trade in but it needs a new battery and the head phone jack only outputs to one ear. Not sure if it's worth repairing
Thinking of using Itunes match to Icloud for our music so that my wife can get all of it on her Iphone.

Just tried the ipod diagnostics and this is what I got.
Pending sectors 0
Power on hours 174
start stops 17842
That was all that it showed. Didn't have any temp stats like the example showed
Anyways it appears my HD is OK.

Yes, Rad, your HD still looks good, your old hardisk dont have the thermostat so no data.
So if you have been using the back USB ports, then I think, it is the iTunes updates, that triggers the timeout on some older iPods, I don't think Apple will fix this. If you can, perhaps downgrade back to the earlier iTunes version, unless you are getting the iPad or iPhone 5, to enjoy the enhanced functionality.

I now have to wait and see if my wifes Macbook (white) 2nd generation intel one is up to the Lion or Mt Lion upgrade. Might be time to trade that in too along with the ipods for a nice Macbook Air or Ipad!
