There is nothing that you can do to lock email in any fashion - even by enabling restrictions. All that you can do by enabling restrictions with regard to the mail app is that you can prevent changes to the account and the settings.
You can restrict a few apps as Diavonex has suggested above - but there is no way to lock mail or password protect it - or any app on the iPad for that matter.

The only way you could protect your mail is to use web access instead of the mail app, and then you can use your normal password to keep others out of it.

No, you can't lock just your email but you CAN turn it off in settings>mail, contacts, calendars. I've sucessfully turned it off and on without losing emails. Someone would have to know how to enable it to see it, but if they didn't, that should discourage some snooping. This is helpful for when you give your phone or ipad to the kid to play with, after enabling all sorts of restrictions. Not so helpful for tech savvy adults.
