If your iPod is set up to automatically sync with your library, it will automatically copy over any ratings you have made on your iPod back into iTunes overwriting any previous ratings you had for a track. Are you sure you aren't accidentally rating a song while listening to it?
The only way to prevent ratings from syncing back into iTunes from your iPod is to manually manage its contents, which is very different from having your iPod automatically sync content from your library. See this article for more details.

i haven't rated the songs on my ipod, whenever i plug it onto itunes, it randomizes the ratings of nearly every song. i try to change those ratings manually on itunes (not on my ipod) but whenever i plug it back on, every song's ratings goes back to the same ratings. so i've restored my ipod nano, check the manually manage box and then synced all the songs bakc into place

So even when you manually manage the iPod's contents, the ratings get mucked up every time you connect your iPod to your iTunes library?
If that is the case, it may be necessary to remove and re-install the latest version of iTunes. Use the instructions in this Apple support document to make sure all Apple related software is removed and re-installed properly.
